Conor Ryan is based out of Kinsale, where he used to run the highly successful Folk House bar, has been in the hospitality trade for over 35 yrs. He is currently Head of Operations and Global Brand Ambassador for Pearse Lyons Distillery in the Dublin Liberties.

Conor’s deep passion for whiskey and food made him the ideal host for this special Irish cheese and Pearse Lyons whiskey pairing. Conor has access to the best casks in Pearse Lyons Distillery and he will had select samples to compliment the best of Irish Cheeses, presented as a grazing board at each table.
